Iron-Rich Noodle Salad

Ingredients (serves 2-3 portions):

  • 200g whole wheat or spinach noodles (rich in iron)
  • 160g cooked chickpeas
  • 60g fresh spinach
  • 1 red bell pepper
  • 2 carrots
  • 30g dried dates
  • 35g toasted pumpkin seeds (rich in iron)
  • 100g crumbled feta cheese (optional)

Dressing:

  • 40g olive oil
  • 30g lemon juice
  • 15g balsamic vinegar
  • 5g mustard
  • 1 garlic clove
  • Salt and pepper to taste

Instructions:

  1. Cook the Noodles:
    • Cook 200g of whole wheat or spinach noodles according to package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.
  2. Prepare the Dressing:
    • In a small bowl, whisk together olive oil, lemon juice, balsamic vinegar, mustard, minced garlic, salt, and pepper until well combined.
  3. Assemble the Salad:
    • Shred the carrots and cut the pepper into thin slices.
    • In a large bowl, combine the cooked noodles, chickpeas, fresh spinach, red bell pepper, carrots, dates, and toasted pumpkin seeds.
  4. Add the Dressing:
    • Pour the dressing over the salad and toss gently to combine, ensuring that all ingredients are well coated.
  5. Optional Additions:
    • If desired, sprinkle crumbled feta cheese over the top for added flavor and creaminess.
  6. Serve:
    • Serve immediately or refrigerate for 30 minutes to let the flavors meld together. This salad can be served chilled or at room temperature.
